
Supplì, Roman fried rice croquettes with mozzarella
These Roman rice croquettes are crisp outside, tender inside, and filled with molten mozzarella. Somewhere between tomato risotto and the perfect fried snack, they are classic Italian street food at its best.

Sauté the finely chopped onion in olive oil. Add the rice and stir for 1 minute so the grains are lightly coated.

Pour in the passata, then add the hot broth gradually, stirring, until the rice is tender and fairly dry. Stir in the Parmesan and season with salt and pepper.

Spread the rice on a tray and let it cool completely.

Cut the mozzarella into small cubes. Take a portion of rice, tuck a cube of mozzarella into the center, and shape it into an oval croquette.

Bread each supplì by coating it in flour, then beaten egg, then breadcrumbs.

Fry at 170°C until deep golden. Drain on paper towels and serve hot so the center stays beautifully stretchy.
