Cut the chicken into large bite-size pieces. Toss with the soy sauce, sake, ginger, garlic, and sesame oil, then marinate for 15 minutes.

Mix the cornstarch and flour. Lightly drain the chicken and coat each piece just before frying.

Heat the oil to 170°C / 340°F. Fry the chicken in batches for 4 to 5 minutes, until golden and nearly cooked through.
