Sicilian fried rice balls

    Bring the stock to a simmer with the saffron. Add the rice and cook gently until the liquid is almost fully absorbed and the grains are tender.

    Stir in the butter and Parmesan. Spread the rice onto a tray and let it cool completely so it is easy to shape.

    Cut the mozzarella into small cubes. Take a portion of rice, flatten it in your hand, place some mozzarella and a few peas in the center, then close it up to form a ball.

    Coat each arancino by rolling it in flour, then beaten egg, then breadcrumbs.

    Heat the oil to 170°C and fry the arancini in batches until evenly golden and crisp. Drain on paper towels and serve hot.
