Peel the potatoes, cut them into thick fries, and rinse under cold water. Dry them thoroughly.

Blanch the fries in 150°C oil for 6 to 7 minutes without browning. Drain on paper towels.

Take the steaks out of the refrigerator 20 minutes before cooking. Season generously with salt and pepper.

Heat a cast-iron skillet until very hot. Sear the steaks for 2 to 4 minutes per side, depending on thickness.

Add the butter, crushed garlic, and thyme, then baste for 1 minute until the meat is glossy and aromatic. Rest for 5 minutes.

Raise the oil to 190°C and fry the potatoes a second time for 2 to 3 minutes, until deeply golden and crisp. Salt immediately.
