French Onion Soup

Traditional French onion soup, gratinéed with Gruyère on a bread croûton.

    Peel and thinly slice the onions into rings.

    Melt butter in a large pot. Add the onions and caramelise over low heat for 30 minutes, stirring regularly.

    Sprinkle with flour, stir for 1 minute, then deglaze with white wine. Reduce for 2 minutes.

    Pour in the stock, add thyme and bay leaf. Simmer for 15 minutes. Remove herbs.

    Ladle soup into ovenproof bowls. Place a bread slice on each and cover with grated Gruyère.

    Grill for 3–5 minutes until the cheese is golden and bubbling.
