Warm the cream, milk, sugar, and split vanilla bean together. Bring just to a simmer, then take off the heat and let the vanilla infuse for 5 minutes.

Add the gelatin and stir until fully dissolved. Remove the vanilla bean.

Pour into glasses or molds. Let cool, then chill for at least 4 hours until set but still delicately wobbly.

Cook the berries with the lemon juice for 3 to 4 minutes to make a quick sauce. Let it cool.
