Rinse the rice until the water is nearly clear, then cook it. Mix the rice vinegar, sugar, and salt, then fold the seasoning into the hot rice. Let it cool to lukewarm.

Cut the salmon, cucumber, and avocado into even strips.

Place a sheet of nori on a bamboo mat. With damp hands, spread a thin layer of rice over it, leaving a 2 cm / 3/4 inch border at the top.

Arrange some salmon, avocado, cucumber, and a pinch of sesame seeds across the center.

Roll firmly with the mat to form a tight cylinder, then repeat with the remaining ingredients.
